Identifikasi Jamur Pada Biji Jagung (Zea mays L.) Busuk dan Segar yang dijual di Pasar Baru Borong Makassar
Abstract
Jamur dapat menyebabkan berbagai tingkat dekomposisi bahan pangan. Selain itu, jamur dapat tumbuh pada hasil pertanian sebelum dipanen, hasil panen yang sedang disimpan, bahan pangan yang telah diolah maupun yang dijual di pasar. Penelitian ini bertujuan untuk mengidentifikasi jenis jamur pada jagung yang busuk dan segar yang dijual di pasar Baru Borong Makassar. Metode identifikasi dengan pewarnaan dan mikroskopik. Hasil penelitian diperoleh dua spesies jamur yaitu Aspergillus fumigatus dan Microsporum gypseum.
