Implementasi Pendekatan STEAM pada Mata Kuliah Bioteknologi Pangan Sebagai Upaya Mitigasi Learning Loss
Abstrak
Penelitian ini bertujuan untuk mendeskripsikan implementasi pendekatan STEAM (Science, Technology, Engineering, Arts, Mathematics) pada mata kuliah Bioteknologi Pangan sebagai upaya mitigasi learning loss yang disebabkan oleh pandemmi Covid-19. Penelitian ini menggunakan pendekatan kualitatif. Unit analisis penelitian yaitu mahasiswa Pendidikan Biologi yang mengambil mata kuliah Bioteknologi Pangan Tahun Akademik 2020/2021. Peneliti menggunakan teknik observasi langsung selama pembelajaran atau 16 (enam belas) kali pertemuan. Selain itu dilakukan wawancara dan analisis dokumen untuk menguatkan data. Data yang terkumpul dianalisis secara induktif melalui tiga tahap, yaitu memadatkan data, menampilkan data, dan membuat kesimpulan atau verifikasi data. Kesimpulan pada penelitian ini yaitu integrasi Sains pada mata kuliah bioteknologi pangan yaitu adanya kolaborasi beberapa ilmu pengetahuan yang terkait dengan bioteknologi pangan. Integrasi teknologi terjadi pada penerapan berbagai alat komunikasi dan media pembelajaran online. Integrasi teknik terlihat pada penggunaan teknik, alat dan bahan dalam membuat produk yang inovatif. Keterpaduan seni terlihat pada produk makanan yang dibuat oleh mahasiswa dan penerapan strategi pemasaran produk, sedangkan integrasi matematika dapat dilihat pada saat menimbang dan mengukur berbagai bahan masakan agar sesuai dengan takaran seerta perhitungan modal, laba rugi penjualan. Implementasi pendekatan STEAM pada proses pembelajaran dianggap dapat mengurangi risiko learning loss pada mahasiswa dikarenakan 3 indikator learning loss tidak ditemukan pada mahasiswa.
